2020 Cabernet Sauvignon, Diamond Mountain District Estate
The Winemaking
Our estate fruit is always hand-picked and meticulously sorted and destemmed to 2-ton open top fermenters. Primary fermentation lasts nearly a month with active management throughout to ensure proper extraction and tannin development. Aged in the Teachworth caves for two years, this wine was bottled in August 2022 following 21 months in French oak barrels, 70% new.
The Wine
This vintage abounds with beautiful blue and black fruits on the nose. The palate, despite mid-summer heat, is lithe and supple with beautiful natural acidity and refined tannins. This is a wine we are enjoying now and fully expect to go the distance.
